Quickly becoming one of my favorite breakfasts. Egg white omelette with spinach, corn, low-fat mozzarella, and pepper. Side of light blueberry yogurt and strawberries. (232 cals). Off to the gym after this!

Lunch: whole wheat spaghettini with diced tomatoes (garlic, onion, basil, garlic powder, kale, and diced tomatoes) (158 cals)

Breakfast: whole wheat sandwich thin with peanut butter and a side of fruit (pineapple, strawberries, and mango) (321 cals)

Lunch: pizza (whole wheat lavash, spinach, basil, homemade turkey sausage, and lite mozzarella) and a side of salad (spinach, avocado, pineapple, and low-fat Italian dressing). (364 cals)

Light breakfast since I woke up late. Egg white omelette with spinach, corn, low-fat mozzarella, and pepper. Side of light strawberry yogurt (209 cals)

Dinner: tuna salad (tuna, onion, celery, tomato, and olive oil mayo) on a whole wheat sandwich thin with reduced-fat cheddar and spinach; side of hot peppers—my fave! (263 cals)

5 Minute CRISPY Sweet Potato Chips
I was pretty shocked when I discovered this recipe. It’s UHMAZING.
Total Time: 5 minutes
Ingredients:
- Sweet potato
- Salt (or any other seasoning)
- Olive oil spray can
Instructions:
- Use a mandolin and slice up your sweet potato (try to find one that has an even girth throughout the entire length of the potato so you have evenly sized chips)
- Cut parchment paper the size of your glass plate inside the microwave
- Lay the chips in a single layer on the parchment paper
- Lightly spray with non-stick spray and salt them
- Microwave on 100% power for 2 minutes 30 seconds (Please note: This measurement was for MY microwave, so please be aware of your own) You will know they are done when they start to lightly brown, but do not wait till they entirely brown — that would mean it burnt)
- Let the chips cool, and they will turn crispy :)

NEED TO TRY THIS OUT!
Lunch: tuna poke salad (tuna, seaweed salad, avocado, scallions, soy sauce, rice wine vinegar, sriracha, granulated sugar) (509 cals). A little high in calories but full of healthy fats. Gonna burn it off at the gym later :)

Late breakfast post: mango and an egg white omelette with spinach, tomatoes, basil, and lite mozzarella (168 cals)

Lunch: tuna sashimi and seaweed salad with soy sauce and wasabi. Amazingly satisfying (249 cals)

Breakfast: clementines with a turkey sausage and reduced-fat cheddar cheese sandwich on a wheat thin (299 cals)
